Grass-fed lamb is a delicious way to increase the flavor and variety of lean protein and essential vitamins and minerals in your diet as you work to heal your body and meet your fitness goals.
I only had lamb once when I was a kid and let’s just say I was not inspired to ever want to eat it again (chuckle). But this year, after experimenting with raising sheep out in my own pastures, and now having a stock of beautifully marbled 100% grass-fed lamb, I have become wholly converted!
Let me tell you straight: grilled lamb chops blow my mind. I can’t wait for you to try them!
How Much Do I Get?
If you’re new to lamb, you might want to try a Lamb Sampler. You’ll have 10lbs and a variety of cuts so you get a chance to have Blow Your Mind Grilled Chops or delicious Moroccan Lamb with Couscous or good ol’ hearty Irish Shepherd’s Pie without a huge commitment.
If you’ve got a larger family and/or are feeling adventurous, you might try a Lamb Box. You’ll have 20lbs of various cuts including Leg of Lamb, Lamb Roast, Lamb Chops, and Ground Lamb. It’ll knock your socks off and you can always come back next season for more.
And if you know you’re a fan of lamb, then the Whole Lamb Share is definitely for you. Add variety to your protein intake and experience the delicious flavor profile of grass-fed lamb with nose-to-tail cuts: all your favorites, plus the incredibly nourishing organ meats and beautiful grass-fed fat.
If you choose a Lamb Sampler or Lamb Box, you’ll pay in full at checkout. If you choose a Whole Lamb Share, you’ll make a $200 deposit now to reserve the share and that deposit will be applied to the final cost ($9.99/lb hanging weight).
How It Works
Lamb is available at limited times throughout the year. When the lamb is ready for harvest, we will deliver them directly to the butcher. During that time, the butcher will call you directly to confirm your choice of cuts. The butcher is very knowledgeable and very patient. He will walk you through the process step-by-step and be happy to answer all your questions. You can also always reach out and we’ll be happy to help in any way you need.
The butcher will also notify you when your meat is ready and you will pick it up directly from them. Turn-around time is usually a week. Unless you specify otherwise, it will all be frozen when you pick it up, so it can go directly into your freezer.

We use Keller Meats for all of our large animal harvests. We have always had great experiences with Tom and his crew and they are always accommodating to our sometimes unorthodox requests (chuckle). Their address is 3739 Avon Lake Rd, Litchfield OH 44253. You may also call them at 330-722-4501.
Calculating Total Cost
You will pay us directly for the lamb (we will email an invoice with the final balance soon after the lamb goes to harvest and we have the actual hanging weight) and you will pay the butcher directly for the processing.
The processing cost for lamb is a $160 flat fee.
For example, for a 110lb live lamb, the hanging weight will come to approximately 40-50 lbs. If you’ve reserved a Whole Lamb Share and the lamb weighs 45lbs, you’ll pay $450 to us at Belvedere Farmstead (of which $200 will already have been paid as your deposit).
And you’ll pay $160 to the butcher in slaughter/processing fees. If you budget $600-700 for a Whole Lamb Share, you’ll be in good shape.
Calculating Total Yield
The lamb is cut however you like. The butcher is very helpful and accommodating and we can work with you to be sure you get exactly what you’d like from your lamb share.
Most lambs will average approximately 50lbs hanging weight (the weight after slaughter and before the lamb is cut down). This is the weight we use to calculate the final cost. The finished weight you get back will be less than the hanging weight due to reduction of the hide, head, and feet, and boning.
From a 50lb lamb, you’ll get 35-45lbs in cuts. You can get even more if you also request the bones and the organs & offal (liver, heart, and kidney).

If you’ve never ordered lamb in bulk before, it’s an adventure! You’ll likely get cuts you’ve never seen before and you’ll learn new ways to prepare it to extract the best flavor. And next time, you’ll know a little better which cuts you like best and which you won’t order again.
